There will be no meal plan this week. I’m just serving hot chocolate because I’m freezing!
OK, just kidding. But man, is it cold here! When I got up yesterday it was 5°. Today we’re having a heat wave; it’s already 32°! But I think that’s about as high as it’s gonna get. So, I’m going to be planning some hearty, warm-you-up meals this week.
I’m sorry I don’t have very many pictures of these meals. I haven’t made a lot of them for a while; not since before I became “that blogging mom” who now instead of sitting down to eat dinner, takes about 15 minutes to photograph my dinner. It’s kind of ironic because I’m finally able to sit down and eat without cutting someone’s food. And I still don’t eat a hot meal! But it’s fun so I’m not complaining. But getting back to the lack of photos: I promise I’ll take photos this week and post them to the recipes as soon as I possible can. I’ll make it my personal challenge to post them the very day I serve the meal.
Wow. Did I just write that for all to see? It’s going to be a rough week.
For now, I wanted to make sure you at least have some recipes, so I decided to go ahead and post them without pictures. Check back as the week progresses and hopefully the pics will be there too. And hopefully this Carpal Tunnel will settle back down so I can get some typing done! (Pray for me if you want recipes next week!) Seriously, did I just bribe you to pray for me? So tacky. I’m sorry. But pray for me if you want recipes next week!
Oh, one more thing. I need healthy snack ideas. If you have a healthy homemade snack that you and/or your kids love, would you consider telling me about it in the comments? We need more ideas around here! Thanks so much.
Okay, moving on. Here’s my plan so far for the coming week.
And as usual, here are are few notes about my meal plan:
- My plans are flexible, things usually change as we go along. No worries; just rearrange as needed.
- Remember to consider your schedule when deciding which meals to serve on which nights. Assign quick or crockpot meals on those busy days, fun meals on Friday, etc.
- Come back often because I’ll try to add a post for anything I don’t currently have linked.
Dinners:
Chicken Parmesan, Salad
BBQ Baked Chicken, Baked Beans, Rolls
White Bean Chicken Chili
Pot Roast
Potato soup (Still looking for a great recipe, if I like the one I try this week I’ll post it. If not, it’s back to the drawing board.)
Pizza (Yes, you saw this on last week’s menu. I decided to let my sore wrist and aching neck be a good excuse to get takeout. We plan on takeout two Fridays per month so it wasn’t a budget breaker, I just have to make sure we stay in this Friday! )
Date night
Lunches:
Leftovers
Bean and cheese quesadillas (beans and cheese from the freezer, making homemade tortillas this week.)
Beef & Bean nachos (from the freezer)
Tomato, Basil, and Spinach Calzones (Yes, I actually looked up the difference between a stromboli and a calzone and what we’re having more closely resembles a calzone.)
Breakfast Choices:
I’m feeling pretty uninspired in this area. We’ve got muffins and egg pockets in the freezer. Smoothies are always an option, along with oatmeal. Hmm. maybe I’ll come up with something new and exciting this week. If I do, I’ll let you know.
Snacks:
Same here, pretty uninspired. I’ve always struggled with healthy snack ideas. I know there’s always fruit & nuts but I don’t want to be broken record here, always listing the same 5 snacks. It’s my goal this week to find a few more great snacks to add to my list. If your family has a favorite healthy snack, please, share in the comments.
But here’s what will be available this week at any given time:
Fruit & Nuts
Just fruit
Peanut Butter Banana Rice Cakes
Crackers & Cheese (arguably not the healthiest choice but it’s a step in the right direction)
Popcorn
Pizza nachos (Nacho chips, pizza sauce and pizza cheese. Take is easy on the sauce or your chips will be soggy.)
Saturday Morning Freezer Cooking Session:
Um, well, I think that ship has sailed. It’s noon on Saturday and I’m still working on this post. If I get enough work done on the site today (those recipes I’ve been promising) I’ll probably make some of the following:
Tortillas
Pizza Dough for the calzones and Friday night’s pizza
Refried beans if we don’t have any in the freezer
Dinner rolls to go with the chicken. Better get those started now.
