Energy Bites
Ingredients
  • 1 cup (dry) old-fashioned oatmeal
  • ⅔ cup unsweetened coconut flakes
  • ⅓-1/2 cup mini chocolate chips
  • ½ cup peanut butter
  • ½ cup ground flaxseed
  • ⅓ cup honey or maple syrup (or a combo of both)
  • 1 tsp vanilla extract
Instructions
  1. Mix all ingredients either by hand or in a stand mixer.
  2. Form into 1 inch balls.
  3. Refrigerate for 15-30 minutes.
  4. Transfer to a ziplock bag or sealable container and keep refrigerated up to a week.
