Ingredients
  • 1 lb. ground beef
  • 1 package taco seasoning OR:
  • 2 cloves garlic, chopped or grated
  • 1 small onion, chopped small
  • 1 jalapeno (opt.), seeded and minced
  • 1 tsp salt
  • 2 tsp chili powder
  • 1tsp ground cumin
  • 2 tsp cayenne pepper sauce (opt.)
  • 1 TBSP soy sauce
  • 1 cup (or one can) refried beans
  • ½ cup salsa or pico de gallo
  • ½ cup sour cream
  • ¾ cup Mexican cheese blend
  • 1 head romaine lettuce, cut into thin slices, or ribbons
Instructions
  1. Brown ground beef in a large skillet.
  2. If using seasoning packet, follow directions.
  3. If seasoning your own;
  4. add seasonings to ground beef as it browns.
  5. Simmer until the onions are tender and seasonings have developed their flavor, about 10 minutes.
  6. For each roll-up;
  7. Lay one flour tortilla on your cooking surface.
  8. Leaving some space around the edges,spread with a layer of each element, in this order;
  9. refried beans
  10. sour cream
  11. taco meat
  12. pico de gallo or salsa
  13. Shredded cheese
  14. lettuce
  15. Roll the tortilla tightly, cut in half, enjoy with chips & salsa!
