Chicken Sliders with Mango Slaw
This is a delicious sandwich that you can put together in minutes. Great for an easy dinner or even a picnic.
Ingredients
  • 1 rotisserie chicken
  • Slider rolls (small hamburger buns)
  • 1 mango, peeled and sliced thin (check youtube for videos on the best way to cut a mango.)
  • 1 handful cilantro, chopped small
  • 2 cups shredded cabbage or coleslaw mix
  • 2 TBSP Olive Oil
  • 1 TBSP lime juice
  • sprinkle salt
Instructions
  1. In a medium bowl, combine the mango, cilantro, coleslaw mix, olive oil and lime juice.
  2. Mix to combine.
  3. Cut chicken into slices and put several pieces on each sandwich bun.
  4. Top with a spoonful of Mango Slaw.
  5. You can make the slaw right before dinner or make it earlier in the day and chill until dinner. The flavored will combine a bit better if you make it early.
