Chicken Sliders with Mango Slaw |
This is a delicious sandwich that you can put together in minutes. Great for an easy dinner or even a picnic.
- 1 rotisserie chicken
- Slider rolls (small hamburger buns)
- 1 mango, peeled and sliced thin (check youtube for videos on the best way to cut a mango.)
- 1 handful cilantro, chopped small
- 2 cups shredded cabbage or coleslaw mix
- 2 TBSP Olive Oil
- 1 TBSP lime juice
- sprinkle salt
- In a medium bowl, combine the mango, cilantro, coleslaw mix, olive oil and lime juice.
- Mix to combine.
- Cut chicken into slices and put several pieces on each sandwich bun.
- Top with a spoonful of Mango Slaw.
- You can make the slaw right before dinner or make it earlier in the day and chill until dinner. The flavored will combine a bit better if you make it early.
