Ingredients
  • Ingredients:
  • ½ cup oil (I use either melted butter or Coconut oil)

  • 1 tsp soda
  • 1 tsp salt
  • 1 cup mashed banana (about two bananas)
  • 1 TBS vinegar plus enough milk to make a total of 1 cup
  • 1 cup semi sweet chocolate chips
  • ½ cup chopped walnuts (optional)
Instructions
  1. Cream together the oil, sugar, and eggs. Beat until fluffy.
  2. Add the flour, soda, and salt.
  3. Alternate above with the banana and milk/vinegar mixture.
  4. Add in the chocolate chips and stir to combine.
  5. Mix well after each addition.
  6. Spray muffin pan with cooking spray.
  7. Using a large scoop, fill each muffin cavity ⅔ full with batter.
  8. Bake on 350° for 20-25 minutes.
  9. To freeze, allow to completely cool, then place in a labelled freezer bag and freeze.
