
It’s Monday evening and I had wanted to get this week’s 15 minute meal plan out to you at least by this morning if not yesterday! I just know you’ve been sitting on the edge of your seat waiting for my next meal plan… and my big news.
(Okay, really I know you haven’t, but one can dream about being indispensable, right?)

So the moment you’ve (probably not) been waiting for…
My meal plan for the week
AND…
I can finally tell you what’s been keeping me crazy- busy!
It all started right after Christmas. I had a dream and a will stubborn enough to make it come true. So I began painting, and fixing, and washing, and… packing.
I wanted to move, and not just “soon”, but before summer.
There was much work to be done, along with everything I was already doing; homeschooling, blogging, and homemaking. But we rolled up our sleeves and got it done. We listed our house this weekend and sold it in one day! I think God wanted to make sure we didn’t take any credit for this working out, it’s all Him!
There was a lot of work and even some tears.(And I’m not talking about the kids!) And we’re not even close to done. We’re just done with the phase of getting the house looking its best and keeping it clean, hiring a realtor and keeping ourselves busy all day (with the dog in the car with us) while people walked through our house. Now comes the paperwork, the real packing, (which will require getting my hands on a large number of empty boxes), the loading and unloading, and then all the unpacking and changing addresses and phone numbers and the address we have plugged into the GPS for “home”.
We’re moving! I’m so excited! And my family is excited too. We’re not moving far; just to the next town. So the kids will continue with their current activities and still see their friends. We have friends in the neighborhood we’re moving to, so that makes it extra sweet. It’s going to be a busy month but it will be so worth it.
Oh, you may remember I said that when this is done my food photography will be better. And you may be wondering what moving has to do with food photography. Well, first of all, my kitchen in the new house has more light!!! Plus, it has gorgeous granite counter tops; something I’ve never had, so this will be a fun experience. I hope they’re not too dark for photos, if so I’ll just use the table, which will be near a window… yay!
So you can see why I need 15 minute meals for the next several weeks.
Here’s what we’re having this week:
BLTs
Super Nachos (Pictured above)
Hamburgers & Beans (For the beans: sauté some chopped onion and green pepper, add a can of beans and a TBSP brown sugar.)
Lunches will be leftovers and sandwiches.
Breakfasts will be smoothies, oatmeal with blueberries, and eggs & toast.
Lydia made some Peanut Butter Bars so that will be our dessert this week.
