An easy “go-to” is mac’n cheese, right? But I have to confess, sometimes I don’t really feel like I’m eating a meal if all I have is mac’n cheese. It’s kind of boring, ya know?
So this time I decided to add something to it to make it feel more like a meal.
We had some pizza toppings leftover from pizza night, which I usually use to make omelets on Sunday night. I’m not sure what we did instead, but apparently we didn’t have omelets because there sat the diced ham, green pepper and mushrooms, and the sliced pepperoni. All chopped up with no place to go.
So they went into my mac’n cheese.
It was pretty good! Not sure I’d eat it every week, but I’m just not a mac’n cheese -as- a -meal- kind- of- gal. This was a fun change and it helped us up stuff in the fridge, which is a great habit if you’re wanting to Eat Better and Spend Less!
