Creamy Chicken & Peppers, Noodles, Peas
  • 1LB boneless chicken, cut into 2 inch cubes
  • 1 can cream of chicken soup
  • 1 green pepper,sliced
  • 1 onion, sliced
  • ½ bag egg noodles
  • Frozen peas
  1. Cut chicken into chunks.
  2. Cut pepper and onion into slices.
  3. Lightly oil a large skillet, heat on medium.
  4. Add chicken, season with S&P, add veggies.
  5. Cook until chicken is browned and juices run clear. (about 5-10 min)
  6. Bring water and 1 tsp salt to a boil in a medium saucepan.
  7. Add noodles, stir.
  8. Cook until noodles are just tender. (6-8 minutes)
  9. In a medium saucepan, simmer peas in just enough water to cover.
  10. Add a tsp salt and a tsp of sugar to the water.
  11. (opt.) Add a few chunks of onion in the water for flavor.
  12. Simmer for about 15 minutes.
  13. When chicken is done, add soup and enough water to loosen the soup and make a creamy consistency.
  14. Drain the noodles but don’t rinse.
  15. Add them to the chicken mixture.
  16. Drain peas, add butter if desired.
