Peanut Butter Bars
  • 1 cup butter, at room temp
  • 1½ cups peanut butter
  • 3 cups powdered sugar
  • 1½ cups graham cracker crumbs
  • 10-oz. chocolate chips (I used a mix of both milk chocolate and semi sweet)
  1. In a stand mixer, blend the butter and peanut butter until smooth.
  2. Add in the cracker crumbs and mix.
  3. Add the powdered sugar and combine well.
  4. Line a bar pan with wax paper.
  5. Spread mixture evenly onto the bar pan. If it's really sticky you may need to add more powdered sugar so you can spread it.
  6. Melt chocolate in the microwave in 25 second intervals, stirring in between.
  7. When melted, add about 1 TBSP peanut butter and stir.
  8. Spread chocolate over peanut butter mixture.
  9. Refrigerate for about 20 minutes.
