Chicken Parmesan, Salad

I love getting chicken parmesan when we eat out but honestly, you can make it just as easily at home, so why pay so much for it?

I use the breaded chicken breasts because it’s easier and I just like it better that way. But you could also do this same dish with boneless skinless chicken breasts. Just brown in in a pan first (almost cook it through) then it will finish cooking when you bake it with the sauce and cheese.

Chicken Parmesan, Salad
  • Frozen, breaded chicken breast; 1 per person
  • Sliced provolone cheese; 1 per person
  • 1 jar spaghetti sauce
  • 1 box thin spaghetti
  • 1 head romaine lettuce
  • ½ bag baby spinach
  • 1 cucumber
  • ½ bag shredded carrots
  • ½ green pepper
  • salad dressing
  1. Wash and chop salad veggies, transfer to a serving bowl, refrigerate until serving.
  2. Preheat oven according to the chicken directions.
  3. Bring a large pot of water and 1 tsp salt to a boil.
  4. Line a cookie sheet with foil and place one piece of chicken per person on the pan
  5. Bake chicken the amount of time stated, minus 5 minutes
  6. When water boils, add spaghetti and stir.
  7. Allow spaghetti to cook until tender.
  8. When chicken is almost done, remove pan from oven.
  9. Put a large spoonful of spaghetti sauce and one piece or cheese on each piece of chicken.
  10. Return to oven for 5 minutes to allow cheese to melt.
  11. Drain spaghetti and return to pan.
  12. Add unused sauce and heat through.
  13. Transfer spaghetti to a serving bowl.
  14. Remove chicken from oven, transfer to a platter and serve with pasta and salad.
