This is a super easy meal but feels like sunday dinner. If you have homemade rolls in the freezer (or feel like making some), all the better!

BBQ Baked Chicken, Baked Beans, Rolls

  • Chicken breast (bone in) 1 per person (or per 2 kids)
  • Barbecue sauce
  • 3 c. Yellow Eye or Great Northern Beans
  • 1 small onion
  • ¼ cup ketchup
  • ¼ tsp dry mustard
  • 1 tsp salt
  • ⅙ cup sugar
  • ⅙ cup brown sugar
  • ½ tsp black pepper
  • piece of salt pork, (about 2”) or a few pieces of bacon
  • frozen dinner rolls
  1. Start the beans about 6-7 hours before supper and the chicken about 45 min. to an hour before.
  2. The crock pot and your oven will do almost all of the work for you!
  3. For the Beans:
  4. Mix all of the ingredients from the beans to the bacon.
  5. Add about 1 cup of water and pour mixture into crock pot.
  6. Add more water to at least cover the beans (about 4 cups)
  7. Cook for 6 hours on medium or low. Don’t let the beans dry out.
  8. For the Chicken:
  9. Lay the chicken in a baking pan lined with foil.
  10. Cover with BBQ sauce and bake on 350° for about 40 minutes or until juices run clear.
  11. Heat rolls according to package directions so they’ll be done when the chicken is done.
